Atatürk Orman Çiftliği’nden gelen serinlik: AOÇ dondurması

Abstract

Atatürk Orman Çiftliği dondurması, AOÇ süt fabrikasının kurulmasıyla süt ve süt ürünleri üretiminde ulaşılan başarı sonrası üretimine başlanan, günümüzde de varlığını ve başarısını sürdürmüş yerel bir ürün olma özelliğiyle ön plana çıkmıştır. AOÇ’de dondurma üretilmesine olanak sağlamış olan süt enstitüsü, ülkenin kendi zenginliklerinin kullanılmasıyla dışa bağlılığın azaltılması ve diğer kurumları da bu yönde teşvik etme amacıyla kurulmuştur ve aynı gayeler, dondurma üretiminde de ön plana konulmuştur. Bu çalışmada, AOÇ dondurmasının üretimine katkı sağlayan üretim basamaklarından başlanılarak dondurma fabrikasının kuruluş süreci, dondurma üretilme sebepleri ve dondurma üretiminin etkileri ele alınacaktır. Yapılmış olan yazılı kaynak taraması ve o döneme ait bilgilere sahip insanlarla yapılmış olan röportajlar, bu çalışmada ele alınacak bilgilerin temellerindendir.

Ataturk Forest Farm ice cream is a local product that started to be produced after the success achieved in the production of milk and dairy products with the establishment of the AFF dairy factory and has continued its existence and success today. The dairy institute, which enabled the production of ice cream in Atatürk Forest Farm, was established with the aim of reducing foreign dependence by using the country's own riches and encouraging other institutions in this direction, and the same goals were put forward in ice cream production. In this study, starting from the production steps that contribute to the production of AFF ice cream, the establishment process of the ice cream factory, the reasons for producing ice cream and the effects of ice cream production will be discussed. The written source scanning and interviews with people who have information about that period are the basis of the information to be discussed in this study.
