Erzurum’un yöresel yemeklerinde Muammer Tanhaş’ın yeri

Yöresel yemekler bulundukları bölgenin coğrafi ve kültürel özelliklerini yansıtan unsurlardır. Bununla birlikte bulundukları bölgeye turistik ve ekonomik açıdan da katkı sağlarlar. Erzurum, kış turizmi ve yöresel yemeklerden Cağ Kebabı ve Kadayıf Dolması ile anılan bir şehirdir. Bu iki unsurun, Erzurum'un ziyaret edilme oranını ve dolayısıyla Türkiye genelinde tanınmasını olumlu yönde etkilediği düşünülmektedir. Bu bağlamda araştırma, Erzurum'da ilk önce Kadayıf Dolması sonra da Cağ Kebabının yöresel yemek ticaretinde etkin rol oynamasında öncü olan ve Erzurum'daki Muammer Usta restoranları ile tanınan Muammer Tanhaş ekseninde şekillenmiştir. Araştırmada Muammer Tanhaş'ın serüveninden, deneyimlerinden, kendisinin yemeklerini özel kılan unsurlardan, bu işi yaparken önem verdiği hususlardan, Erzurum'un yöresel yemeklerinin medyada ve 2011 Kış Olimpiyatları sürecinde de tanınmasında Muammer Usta'nın rolünden bahsedilmiştir.

Local foods reflect the geographical and cultural features of the region they are found in. In addition to this, they contribute to their regions in different aspects, such as tourism and economy. Erzurum is a city which is notable for its winter tourism and the local foods: “Cağ Kebabı” and “Kadayıf Dolması”. It is thought that those two factors affect the number of people visiting Erzurum in a positive manner as well as enhancing the recognition of Erzurum country-wide. In this context, the research is centred on Muammer Tanhaş who is the pioneering chef in Erzurum, with his attempts in making Cağ Kebabı and Kadayıf Dolması attain a significant role in the local food trade and is known with his restaurants called “Muammer Usta”. The research mentions Muammer Tanhaş’s adventure in this occupation, experience, and the factors he attaches importance to while conducting this job, the role of Muammer Tanhaş in placing Cağ Kebabı and Kadayıf Dolması in the media, and in making them gain recognition also during Winter Olympics in the year 2011.
