dc.descriptionThe History of Turkey course (HIST200) is a requirement for all Bilkent undergraduates. It is designed to encourage students to work in groups on projects concerning any topic of their choice that relates to the history of Turkey. It is designed as an interactive course with an emphasis on research and the objective of investigating events, chronologically short historical periods, as well as historic representations. Students from all departments prepare and present final projects for examination by a committee, with 10 projects chosen to receive awards.en_US

dc.description.abstractFarklı coğrafyalarda Osmanlı İmparatorluğu yönetiminde yaşamış insanlar, yaşadıkları bölgelerdeki baskılardan kaçarak Türkiye’ye göç etmiştir. Besler ailesi de 1892 yılında Bulgaristan’dan göç ile Türkiye’ye geldiğinde Bulgar mutfağının etkilerini Türkiye’deki restoranlarına taşımıştır. Bulgar yemek kültürünün bir parçası olan et yemeklerinden köfte, Besler ailesi ile Bursa’da İnegöl köftesi olarak tüm Türkiye’ye mal olmuştur. Bu araştırmada, Bulgar ve Türk mutfağının karşılaştırılması, Besler ailesinin Bulgaristan’dan göçü, 100 yılı aşkın süredir bir aile işletmesi olarak devam eden Besler Köfte’nin kuruluşu, usta-çırak ilişkisine dayanan eğitim şekli, köftenin değişmeyen tarifi ve işletmenin yıllardır başarılı bir şekilde nasıl devam ettiği anlatılacaktır.en_US
dc.description.abstractPeople who lived under the Ottoman Empire in different geographies fled the oppression in the regions where they lived and emigrated to Turkey. When the Besler family emigrated from Bulgaria to Turkey in 1892, they brought the effects of Bulgarian cuisine to their restaurants in Turkey. Meatballs from meat dishes, which are part of Bulgarian food culture, cost all of Turkey as İnegol köfte in Bursa with the Besler family. In this research, the similarities of Bulgarian and Turkish cuisine, the migration of the Besler family from Bulgaria, the establishment of Besler Köfte, which has been a family business for more than 100 years, the education method based on the master-apprentice relationship, the unchanging recipe of meatballs and how the business has been successfully going on for years will be explained.en_US
