Dört masalı bir salondan 78 yıllık bir lokantaya: Rumeli İşkembecisi

Abstract

Bu çalışmada amaç, Rumeli İşkembecisi’nin kurulma süreci, yayılması ve Ankara’daki yemek kültürüne özellikle işkembe sektörüne olan etkisini incelemektir. Çalışma, Rumeli İşkembecisi öncesi Ankara’da işkembenin yeri ile Rumeli İşkembecisi’nin kurucusu Hamdi Özmen’in kuruluş sürecine girişi ile başlayıp günümüze kadar içinde bulunduğu süreç ve sebep olduğu etkileri konu almaktadır. İlk kısımda bu lokanta kurulmasından önce işkembenin bulunduğu konum ele alınmıştır. Sonrasında Hamdi Özden’in hayatındaki gelişmeler ile onu Rumeli İşkembecisi’ni kurmaya iten etkenler ve açılan ilk dükkân anlatılarak Rumeli İşkembecisi’nin tarihi incelenmiştir. Çalışmanın diğer bölümünde zincirleşme süreci altında verilen kararlar, lokasyon belirlenmesi, karşılaşılan zorluklar ve bu durumların lokantaya olan etkisi anlatılmıştır. Araştırmanın son bölümünde Rumeli İşkembecisi’nin Ankara işkembe sektörüne olan etkisine vurgu yapılarak onu özel kılan etkenlere değinilmiştir.

In this study, the aim is to examine the establishment process, expansion, and the impact of Rumeli İşkembecisi on the culinary scene in Ankara, particularly its influence on the culture surrounding işkembe (tripe soup). The study delves into the period before the existence of Rumeli İşkembecisi in Ankara, howits founder Hamdi Özden startedthe establishment process, and continues to explore the course of events and effects it has caused up to the present day. The first section discusses the status of tripe consumption in Ankara prior to the establishment of Rumeli İşkembecisi. Subsequently, the narrative covers the developments in Hamdi Özden’s life, the motivating factors leading him to found Rumeli İşkembecisi, and the inauguration of the first shop, thereby examining the history of Rumeli İşkembecisi. In following part of the study, the decisions made during the process of expansion, the determination of locations, encountered challenges, and their impact on the restaurant are narrated. The final segment of the research highlights the impact of Rumeli İşkembecisi on the tripe sector in Ankara and addresses the factors that distinguish it.
