Geçmişten günümüze bir lezzet hikâyesi: İmam Çağdaş

Türk yemek kültüründe önemli bir yere sahip olan Gaziantep mutfağı, asırlar öncesine uzanan köklü tarihi ve farklı uygarlıkların kesişim noktasında konumlanması sebebiyle çeşitli dönemlere ait türlü lezzetler barındırmakta, bu zenginliğiyle Türk mutfağının temsilcisi sayılabilecek niteliktedir. Ulusal ve uluslararası alanda Gaziantep gastronomisinin sürdürülebilirliğinin sağlanması ve geniş kitlelere tanıtılması hususunda şehirde faaliyet gösteren restoranların oynadığı rol oldukça mühimdir. Bu çalışma, İmam Çağdaş’ın Gaziantep yemek kültürünün gelişmesine ve gastronomi turizmine katkısını konu edinmiştir. Şehrin kültürel mirası olan yeme içme geleneğinin kaybolma tehlikesini önleme ve Gaziantep mutfağının değerinin korunması konusunda restoranın etkisi araştırılmış; iş anlayışı, kalitesi ve halkın talebinden yola çıkılarak bugünkü başarısına ulaşmasındaki faktörler ele alınmıştır.

Gaziantep cuisine, which is an important part of the Turkish food culture, contains various traditional flavours because of the city's history and critical location by means of being an intersection point of civilizations. Therefore, it can be regarded as the representative of Turkish cuisine. The role played by the restaurants is significant in terms of promoting local foods to large masses and providing the sustainability of Gaziantep’s gastronomy in the national and international area . This study focuses on the contribution of Imam Cagdas to the development of Gaziantep food culture and gastronomy tourism. The impact of the restaurant on preventing the danger of extinction of Gaziantep's cultural heritage and preserving the value of Gaziantep cuisine has been researched. The factors such as the professional strategy, quality and the demand of the people that help Imam Cagdas to reach success are discussed.
