dc.descriptionThe History of Turkey course (HIST200) is a requirement for all Bilkent undergraduates. It is designed to encourage students to work in groups on projects concerning any topic of their choice that relates to the history of Turkey. It is designed as an interactive course with an emphasis on research and the objective of investigating events, chronologically short historical periods, as well as historic representations. Students from all departments prepare and present final projects for examination by a committee, with 10 projects chosen to receive awards.en_US

dc.description.abstractPastırma, Türk kültüründe ve mutfağında Osmanlı İmparatorluğu döneminden bugüne önemli bir yere sahiptir. Pastırma üretimiyle öne çıkan illerden biri olan Kastamonu’da pastırmanın tarihi 19. yüzyılın sonlarına kadar uzanır. Tabakoğlu ailesi de Kastamonu’daki bu geleneğin en eski temsilcilerindendir. Geleneksel üretim politikasını sürdürmeyi başarmış olan ve eski usullere uygun üretilen Tabakoğlu pastırması, Kastamonu’ya gelen herkesin uğrak noktalarından biri olmuştur. Bu çalışmada Tabakoğlu ailesi ile yaptığımız röportaj doğrultusunda Kastamonu’da pastırmanın tarihi ve bunun mutfak kültürüne yansımaları, Tabakoğlu ailesi ve pastırma üretim süreçleri, günümüze kadar olan süreçte bunların değişimi anlatılacaktır.en_US
dc.description.abstractPastrami has an important place in Turkish culture and cuisine since the Ottoman Empire period. The history of pastrami dates back to the end of the 19th century in Kastamonu, which is one of the prominent provinces with pastrami production. The Tabakoğlu family is one of the oldest representatives of this tradition in Kastamonu. Tabakoğlu Pastırmaları, which has succeeded in maintaining its traditional production policy and produced in accordance with the old methods, has been one of the stops of everyone who comes to Kastamonu. In this study, the history of pastrami in Kastamonu and its reflections on the culinary culture, the The Tabakoğlu family and pastrami production processes, their changes in the process until today will be explained with the help of the interview with The Tabakoğlu family.en_US
