Rumeli'den İstanbul'a: Selvi Lokantası

Jeopolitik konumu açısından önemli bir yere sahip olan Türkiye için göç, bir parçası olduğu diplomatik ve politik olayların sonuçlarından yalnızca bir tanesidir. Balkanlar başta olmak üzere yıllar boyunca birçok bölgeden aldığı göçler ile ekonomik, politik, sosyal ve kültürel olmak üzere birçok alanda değişim ve gelişim yaşamıştır. Tüm bu değişim ve gelişimlerin bir sonucu olan ve günümüzde izleri hala hissedilen Türk mutfağı ve hizmet sektöründeki olumlu ilerleyiş; öncelikle İstanbul’da olmak üzere lokantacılık sektörüne de yansımıştır. Rumeli’den Türkiye’ye yapılan göçün bir parçası olan Hacızade Ailesi, İstanbul’da kurdukları Selvi Lokantası ile bu ilerleyişe katkıda bulunmuştur. Selvi Lokantası ve Hacızade Ailesi, muhallebici olarak başlayan ve talepler doğrultusunda lokantacılık ile devam eden aile tarihleri ile yaşadıkları göçün ve Türkiye’deki sektörel değişimlerin izlerini günümüzde hala taşımaktadırlar. İlk self-servis lokanta olma özellikleri ile hizmet sektöründe kaydettikleri ilerleme ile Türkiye’deki yemek sektöründe önemli bir yerleri bulunmaktadır.

Migration for Turkey, which has an important place in terms of geopolitical position, is a result of the diplomatic and political issues which it’s been part a of. Turkey has developed itself politically, ecnomically, socially, culturally and in other areas with the migrations it got from other countires starting with Balkans. As a result of this development; the positive progress in Turkish cuisine and service industry got reflected to restaurateur industry in primarily İstanbul and with other cities in Turkey, which it can be still seen until this day. As a part of the mgiration which has been done from Rumalia to Turkey, Hacızade Family has contributed to this progress with the restaurant they opened in İstanbul, called Selvi Restaurant today. Selvi Restaurant and Hacızade Family still have the traces of the results of the changes in the industry which they started as a dairy bar and changed to a restaurant later with the demand of people. With the progress they developed by being the first self-service restaurant, they have a special place in the cuisine industry in Turkey.
