Abstract
Bu araştırmada, Zonguldak’ta Aziz Alpak tarafından 1954 yılında açılan ve ilin en eski pastanelerden biri olan İstanbul Pastanesi tarihsel gelişimi ve bu gelişime etki eden faktörler incelenmiştir. Araştırmamızda özet olarak Türkiye’deki pastacılık tarihi, Zonguldak Pastane kültürü ve bu kültüre İstanbul Pastanesinin katkıları incelenmiştir. Bu araştırmada İstanbul Pastanesi’nin kurucusu Aziz Alpak’ın büyük oğlu Ahmet Alpak ve küçük oğlu Hasan Alpak ile yapılan röportajlardan, çeşitli makalelerden ve gazete haberlerinden ulaşılan bilgilerden yararlanılmıştır. Araştırmada Aziz Alpak’ın hayat hikâyesine, Zonguldak’a gelişine ve iş hayatına başlama sürecine, pastacılık ve pastanecilik serüveninin nasıl ilerlediğine yer verilmiştir. Aziz Alpak’ın açıp daha sonrasında oğullarının işlettiği İstanbul Pastanesinin kuruluşundan bu zamana kadar olan süreci incelenmiş ve Zonguldak’ a olan katkıları analiz edilmiştir.
In this research, Istanbul Patisserie, which was opened by Aziz Alpak in 1954 in Zonguldak and is one of the oldest patisseries in the city, was examined. In our research, the history of pastry in Turkey, the culture of Zonguldak Patisserie and the contributions of Istanbul Patisserie to this culture were investigated. In this study, interviews with Ahmet Alpak and Hasan Alpak, the eldest son of the founder of Istanbul Patisserie, Aziz Alpak, and his younger son Hasan Alpak, various articles and information obtained from newspaper reports were used. In the research, the life story of Aziz Alpak, his arrival in Zonguldak and the process of starting his business life, how the pastry and patisserie adventure progressed were included. The process from the establishment of the Istanbul Patisserie, which was opened by Aziz Alpak and then operated by his sons, until this time has been examined and its contributions to Zonguldak have been analyzed.
