(Bilkent University, 2021) Mehmood, Ahsan; Din, Maaz Ud; Salimzaden, Fuad; Gaziyeva, Nazrin; Nima, Najafi
In this paper, history and cultural significance of tulumba tatlisi will be studied. Tulumba is a centuries old sweet which is important in the Turkish culture. The sweet is known to hail from the Ottoman Empire and has been led down by generations since. The texture and taste of the sweet are quite different from the other Turkish sweets which makes Tulumba tatlisi special in the Turkish culture while there might be many similar sweets to tulumba which include the Spanish Churros, The Balkan Tulumba. Tulumba is also known as the brothel sweet. The method of making tulumba has been quite fixed throughout the centuries which includes deep frying as its main method. This paper analyzes the history of tulumba, the similarity of tulumba to other sweets and if tulumba inspired other sweets as well. The paper also analyzes the method of tulumba making to see whether the method of preparation has changed since the Ottoman period or not.
