Bu rapor gelişen ve değişen Türkiye tatlı kültürünü Nokta Tatlıcısı üzerinden ele almaktadır. Nokta Tatlıcısı'nı seçme nedenimiz; uzun zamandan beri İzmir tatlıcıları arasında var olan önemli konumundan dolayı, İzmir ve Türkiye'deki tatlıcılık kültürünün değişimini ve gelişimini incelemek için iyi bir örnek oluşturmasıdır. Nokta Tatlıcısı uzun zamandır süregelen bir geleneğe sahip olan bir aile şirketidir. Kökleri nesiller öncesine dayanan bu tatlıcılık geleneği, Nokta Tatlıcısı'nın kurucusu olan Nihat Boyacı çocukken ailesi ile beraber Aydın'dan İzmir'e göç etmesiyle ve Nihat Boyacı'nın seyyar satıcılıktan dükkan sahipliğine geçmesiyle, eski geleneklerini kaybetmeden yeni bir çehreye bürünmüştür.1 Nokta Tatlıcısı bu süreçte, başta bir tatlıcının nasıl gelişebileceği olmak üzere bir esnafın yaşayabileceği zorluklar, toplumun eğlence anlayışındaki değişim gibi birçok konuya örnek olabilecek olayların öznesi olmuştur. Bu araştırmada, Nokta Tatlıcısı'nın kuruluşundan başlayarak sattıkları ilk tatlılar ve bunların değişimi, yıllar geçtikçe yaşadıkları zorluklar ve olaylardan bahsedilip, tatlıcıların eskiden sevgili mekanı olma özelliği üzerinden günümüzdeki toplumun tatlıcılara bakış açısının değişimi incelenecektir.

This report is about development and change of Turkish patisserie culture by sampling with a patisserie called Nokta Tatlıcısı. The reason why we choose Nokta Tatlıcısı as a subject is due to the importance of Nokta Tatlıcısı among the patisseries of İzmir, it is a good example to investigate the development and change of the patisserie culture of İzmir and Turkey. Nokta Tatlıcısı is a family company which has a tradition which is lasting for a long time. This patisserie tradition which have their origins from the past generations, without loosing its past traditions it has a contemporary look by the immigration of Nihat Boyacı's dad from Aydın to İzmir and transition between hawker's trade to fixed shop2. In this process, Nokta Tatlıcısı has been an object of some events that could be examples of majorly the challenges that a shopkeeper can face and the change of the sense of entertainment of the society. In this investigation, starting from the establishment of Nokta Tatlıcısı, the first desserts that they sell and the change of them, the challenges that they face and event that are happened over the years will be mentioned and by mentioning being the lover's meeting point feature of patisserie's, the change of the society's view about patisseries.
