Türkiye Cumhuriyeti'nde şekerciliğin Hacı Şerif üzerinden incelenmesi

Tatlı, Türk tarihi boyunca önemli bir yere sahip olmuştur. Bu araştırmada tatlıcılığın eski Türk uygarlıklardaki varlığından ve tüketilen tatlı türlerinden bahsedilmiş, tatlı kültürünün gelişimi Türk devletleri ve Osmanlı devleti üzerinden anlatılmıştır. Araştırmada bu kültürün en iyi temsilcilerinden biri olan Hacı Şerif’in kuruluşu ve Türkiye Cumhuriyeti’nde tatlıcılığa değinilmiş, kuruluşu ardından Hacı Şerif’in gelişimi, bu süreçte karşılaşılan zorluklar ve firmanın bugün oldukça popüler olan dondurmalı irmik helvası gibi Türk tatlıcılığına olan katkılarından bahsedilmiştir.

Desserts have sustained an important role throughout the Turkish history. This research will explain the presence and the culture of confectionery in older Turkish societies as well as elaborating on the development of this culture from ancient Turkish states to Ottoman Empire to Turkish Republic. This article will also address the establishment and the development of Hacı Şerif, which is considered to be one of the better representatives of this confectionery culture, as well as the problems it has encountered alongside with the contribution it has done to the Turkish confectionery such as the semolina dessert with ice cream inside.
