Abstract

Kahve bitkisi 10. yüzyılda Afrika’da keşfedilmiştir. Çeşitli yollarla dünyanın başka yerlerine taşınan kahve, Yemen çekirdekleriyle Osmanlı Devleti’ne girmiştir. Osmanlı Devleti hem kahve bitkisinin Avrupa tarafından tanınmasına vesile olmuş hem de bu bitkiden hazırlanan ilk modern kahve içeceğini Türk kahvesi adı ile tüm dünyaya göstermiştir. Türk kahvesi kahve çekirdeğinin öğütülme, pişirilme ve sunumuyla kendine has bir kahve çeşididir. Zamanla Türk kahvesi, Türk topraklarında toplumsal birliktelik anlamı kazanmıştır. Osmanlı’da yaygınlaşan kahvehane kültürü toplumun sosyal hayatına katkıda bulunmuştur. Kahvehaneler, halka haberleşme ve sosyalleşme merkezleri olarak hizmet etmiştir. Oluşmaya 16. yüzyılda kahvehaneler ve sarayda başlayan Türk kahvesi kültürü, zamanla değişen sosyal yapı ve içeceğin üretiminde görülen kalite kaybı sonucu Cumhuriyet Dönemi’nde zayıflamıştır. Kalitedeki en bariz düşüş, Büyük Buhran sebebiyle kahvenin temin edildiği kaynağın sınırlandırıldığı dönem olan 1930-1940 yılları aralığında görülmüştür. Bu dönemde değerini kaybeden Türk kahvesinin, bir zamanlar hem ülke sınırları içinde hem de dünya genelinde sahip olduğu değeri henüz geri kazanamadığı görülmektedir.


The coffee plant was discovered in the 10 th century in Africa. Coffee, which was carried to different parts of the world in various ways, was introduced to Ottoman Empire with Yemen coffee seeds. The Ottoman Empire introduced coffee seeds to Europe and also taught them about the first beverage made with coffee beans in the form of Turkish coffee. Turkish coffee is a type of coffee that is specialized in the degree of grinding the coffee seed, and the way it is cooked and presented. With these features, it has become widespread and tradition. Economic and political events have affected coffee seed use and consumption habits since coffee enters Turkey through import. In addition, Turkish coffee also means social unity in Turkish lands. The coffeehouse culture, which became widespread in the Ottoman Empire, contributed to the social life of the society. It served as a communication and socialization center for the public. Nowadays, Turkish coffee consumption habits, which started in coffee houses and palaces, have lost their social value. With the introduction of 3 rd generation coffees into our lives, the value of Turkish coffee is preserved by qualified coffee.
