It is designed to encourage students to work in groups on projects concerning any topic of their choice that relates to the history of Turkey. It is designed as an interactive course with an emphasis on research and the objective of investigating events, chronologically short historical periods, as well as historic representations. Students from all departments prepare and present final projects for examination by a committee, with 10 projects chosen to receive awards.Includes bibliographical references (pages 16-17).Bu araştırmada, Ankara’daki en eski pastanelerden biri olan ve 1950’den günümüze kadar süregelmiş, Ruşen Kökten’in kurucusu olduğu Ruşen Pastaneleri aracılığıyla Türkiye’de tatlıcılık ve pastacılık kültürünün gelişmesi, pastanecilik hareketinin başlaması ve 1950’den günümüze uzanan sosyal değişimler analiz edilmiştir. Ruşen Pastaneleri bir aile şirketidir. Aile şirketlerinin çalışma ve işleyiş prensipleri Ruşen Pastaneleri çerçevesinde incelenemiş ve aile şirketlerinde karşılaşılan problemler ile çözümleri üzerinde durulmuştur. Kurulduğu zamandan günümüze kadar geçen sürede birçok ekonomik ve sosyal zorluklarla karşılaşmış olmasına rağmen hala faaliyetini devam ettiren Ruşen Pastaneleri ve Ruşen Kökten’in hayat hikayesi ulaşılan röportajlarla birlikte bu araştırmada yer almakta ve pastanenin kurulma süreci incelenmektedir.In this paper, the progress of the confectionery and pastry culture in Turkey, the beginning of patisserie culture and the social changes in Turkey since 1950 has been analysed with the help of one of the Ankara’s oldest patisseries Ruşen Pastaneleri, which has been continuing since 1950 to this day, and its founder Ruşen Kökten. Ruşen Pastaneleri is a family business. Therefore, the working and operation principles of a family business has been told within the scope of Ruşen Pastaneleri. Also, family business’ common problems and their solutions has been focused on. Ruşen Pastaneleri has been continuing to this day despite of all the economic and social difficulties since the day it was founded.
